Denver Chef Justin Cucci Infuses the Spirit of Rock Legends into His Restaurant Empire

Published March 21, 2024

Denver chef Justin Cucci has successfully merged his love for iconic rock music with his culinary ventures, creating a unique dining experience within the city's food scene. Under the name of Edible Beats, his restaurant group operates six distinct Denver eateries each infused with the rhythms and references of Cucci's favorite bands, like the Grateful Dead and Steely Dan.

Inspiration from the Greats

Cucci, a self-proclaimed Deadhead, doesn't just enjoy the music of famed bands but incorporates their essence into his business model and food philosophy. The names of his operating companies pay homage to Steely Dan, showcasing Cucci’s creative way to blend his interests. The chef believes that both music and food serve as universal languages that provide nourishment and bring people together.

Edible Beats: Where Music Meets the Plate

The connection between Cucci’s passions is evident in his establishments. Root Down, one of his flagship restaurants, draws its name from Beastie Boys' tracks and is set in a repurposed mid-20th-century gas station, reflecting a commitment to sustainability and local fare. Ophelia’s Electric Soapbox, nods to a song by The Band and features live performances throughout the week, enhancing the dining experience with musical vibrancy. Meanwhile, Linger, housed in a former mortuary, offers eclectic global street food in a lively, ironic setting.

A Life Steeped in Culinary and Musical Tradition

Cucci’s upbringing in New York City's Greenwich Village, surrounded by the backdrop of his family's restaurant, the Waverly Inn, coupled with the sounds of the 1970s, distinctly shaped his future path. His earliest music memories involve classic albums on the turntable, such as 'Sgt. Peppers Lonely Hearts Club Band' by the Beatles and 'Moondance' by Van Morrison, which have left a lasting impression.

Discovering the Grateful Dead as a teenager, Cucci was inspired by their blend of artistry and approachability, qualities that he now strives to infuse his restaurants with. He aims to create a genuine, deep connection with his guests much like the bond the Grateful Dead had with their audiences. The music continues to reveal new layers to him, just as he hopes each dining experience at his restaurants will provide returning guests with something new to discover.
